DAVE’S Story
Dave’s career as a butcher started in 1989 behind the counter at Ashbury Market in San Francisco. Fast-forward from a fascinating hind-quarter of beef hanging in the walk-in freezer, he’s been keeping the heritage of the neighborhood butcher alive throughout the Bay Area and abroad.
Dave is passionate about healthy and humane butchery. He shares his decades of knowledge consulting with grocers and through teaching and demonstrations.
